Sounds like a ground issue, check the chassis ground and make sure the dash cluster is grounded. If all is good, you need to look at the back of the printed circuit on the cluster and make sure there is not a break in the ground circuit, follow the black ground wire and make sure it is actually...

Why would you not be using antifreeze in the cooling system? I realize it will never freeze, however water will always run hotter than antifreeze, plus you need the anti corrosion properties as well. I would ditch the electric fans for a good "old school" flex fan.
The black (left upper) wire is a ground, the brown (right upper) is a the - side of the coil, orange wire (center) 12v switched? This is the factory wiring.

I'm looking for the color of the interior, I want to buy interior paint from classic industies or somewhere. I believe the color is dark blue metaic, but dont know how to confirm it without buying the paint and spraying on the parts.. Kinda expensive
